It’s odd for me to praise a bowl of French Onion Soup.  It’s never been my favorite, until I in conclusion tasted a great bowl of French Onion Soup!  My traveling hubby is a fleck of a French Onion Soup (snob) connoisseur.  He’s experienced many bowls on his travels, but this is some of the best he’s always had, or thus he said 🙂  I don’t accept a lot to compare it with, but tin laissez passer on the axe attest to the fact that it’s sweet, cheesy, robust together with downwards correct delicious!

We adore onions inward soups, salads, omelettes, pizza together with inward all kinds of dishes.


So it’s non a stretch to believe I’d honey a large pile of caramelized onions served inward a bowl amongst cheese.  The onions are super sugariness together with silky soft together with this recipe is thus easy!  I did a lot of research, read a lot of reviews and finally ended upward borrowing bits together with pieces from multiple recipes to make my own.  Many recipes telephone telephone for white or crimson vino but I flora the thought of adding beer real appealing.  I used a pale lager (Stella Artois) but your favorite ale would likely go peachy too.

On occasion, French Onion Soup is served amongst a thick blanket of cheese melted over the transcend of a giant land of breadstuff that completely covers the soup.


My hubby said he loved the fact that I entirely used a few pieces of breadstuff (croutons) which allowed some of the cheese to seep downwards into the broth.  Seeping cheese – bonus!  My version of this popular soup is also a lilliputian less ‘brothy’ than some.  That’s because of all the amazing onions together with seeping cheese.  This soup is much easier to consume amongst simply a few crouton styled breadstuff slices, but experience gratis to add together to a greater extent than if y'all want!  I intend it would go peachy amongst a bunch of smaller toasted croutons also … thus easy to consume amongst a spoon.

The thick baguette slices are brushed amongst olive stone oil together with toasted inward the oven until lightly browned on transcend together with bottom.


Fresh garlic is rubbed on the toasted croutons earlier floating the breadstuff inward a bowl of soup.  Sprinkle amongst sliced together with grated Gruyère together with thus broil until melted together with bubbly.  Garnish amongst a lilliputian fresh parsley together with dig in!

Ingredients




  • 1
    tablespoon
    olive oil


  • 3
    tablespoons
    unsalted butter


  • 4
    large sugariness onions,
    peeled together with cutting into 1/4" slices


  • 3
    large garlic cloves,
    divided


  • 1

    dark dark-brown sugar,
    packed


  • 1
    bay leaf


  • ¾
    cup
    pale lager beer,
    such equally Stella Artois or your favorite ale

    ounces
    4 cups beef stock, divided (low sodium preferred)


  • 2

    Dijon mustard


  • 4 - 5
    springs of soft fresh thyme,
    chopped


  • fresh dry soil dark pepper


  • salt to taste,
    if needed


  • 1
    tablespoon
    cornstarch


  • For serving:


  • 12
    1-inch thick slices of baguette


  • Olive stone oil for brushing

    ounces
    Gruyère cheese,
    1 land for each land of bread, the residual shredded together with spread over the transcend of the bowl

    fresh chopped parsley for garnish


  • Additional fresh dry soil dark pepper if desired





Instructions




  1. Add the olive stone oil together with butter to a heavy-bottom large saucepan, warm on medium heat. Add the sliced onions together with fresh dry soil pepper. Cook the onions over medium estrus until they are real soft together with reduced inward volume, most xx minutes. While the onions cook, mince 2 of the garlic cloves together with laid aside.



  2. Reduce the estrus to medium-low, force the onions aside inward the pot together with add together the garlic together with dark-brown saccharide to the pan. Sauté the garlic until fragrant (about 2 minutes), together with thus mix amongst the onions. Cook the onion mixture for some other 20-30 minutes, stirring frequently, or until the onions are deep golden dark-brown inward color. Do non allow them crisp.



  3. Add the beer, three 1/2 cups of the beef stock, Dijon mustard, bay leafage together with thyme to the onions. Simmer, uncovered, for most fifteen minutes.



  4. Mix the remaining 1/2 loving cup of beef stock amongst the cornstarch. Whisk until blended. Slowly drizzle the cornstarch mixture into the onion soup, gently stirring to foreclose lumps.   5. Preheat oven to 350 degrees.

Rub the surface of the toasted baguette slices amongst the cutting side of the garlic. Ladle the soup into 6 ovenproof bowls together with identify on a baking sheet. Preheat oven to broil. Float 2 slices of the toasted baguettes on transcend of each bowl. Cover the breadstuff amongst slices of Gruyère. Top the breadstuff together with soup amongst the shredded cheese. Place the bowls of soup nether the broiler, watching carefully, until the cheese is bubbly, melted together with lightly browned. Sprinkle amongst fresh chopped parsley together with serve immediately.






Recipe Notes
