Jalapeño Turkey Burgers with Grilled Corn Cotija Salsa and Avocado

These burgers are seriously one of my favorite things I’ve had in awhile. I know I enjoin that a lot, only these are SO skilful in addition to the corn cotija salsa MAKES it. I tin’t go plenty corn inwards the summer, particularly when it’s grilled. This is about similar Mexican street corn, just inwards salsa grade…then if that doesn’t convince yous to brand these, I don’t know what will. Also the burgers are super salubrious! I used 99% lean ground turkey, together with whole wheat buns, together with just a footling crumbled cheese inward the salsa for salty creaminess. I could eat these every darn mean solar day.

Ingredients

    ground turkey breast (I used 99% lean)

    medium yellow onion, diced

    jalapeño, seeds and ribs removed, finely chopped

    chili powder


  • ane/two
    tsp.
    garlic pulverization


  • 1/iv
    tsp.
    salt


  • one/iv
    tsp.
    pepper


  • iv
    ears corn


  • ane

    olive crude


  • one/ii
    c.
    diced red onion


  • i/three
    c.
    chopped cilantro


  • juice of ii limes


  • i/two
    c.
    crumbled cotija cheese


  • 1/4
    tsp.
    table salt

    pepper


  • whole wheat buns, toasted if desired


  • bibb lettuce for topping


  • avocado for topping





Instructions





  1. To a medium bowl, add ground turkey, yellow onion, jalapeño, cumin, chili pulverisation, garlic powder, salt, and pepper. Mix alongside your hands to combine in addition to course into iv equal sized patties.



  2. Rub the corn with olive oil and season alongside a lilliputian common salt too pepper. Set aside.
