Creamy Cheesy Corn Murphy Chowder

Ingredients

    medium Yukon potatoes
    peeled as well as chopped

    small carrots
    diced

    stalk celery
    diced


  • 1
    large onion
    chopped


  • 1 1/2
    cups
    hot water


  • 1 1/2
    teaspoons
    "Better than Bouillon" vegetable broth


  • 1
    teaspoon
    salt


  • 2
    cups
    milk,
    plus 1/4 loving cup divided


  • 4
    tablespoons
    butter


  • 1
    tablespoon
    olive oil


  • 1 1/2
    tablespoons
    corn starch


  • 1
    tablespoon
    parsley


  • 1
    teaspoon
    ground dark pepper


  • 1
    cup
    shredded cheese


  • 1
    cup
    yellow corn,
    frozen or canned (drained)





Instructions




  1. In a large Dutch oven melt the butter amongst the olive crude oil over medium heat. Add the carrots, celery, as well as onions as well as saute for 3-5 minutes. Dissolve the vegetable flavored Better than Bouillon inwards 1 1/2 cups hot water. Add the vegetable broth to the sauteed vegetables. Add the potatoes as well as common salt as well as simmer until the potatoes are tender. Using a spatula or large spoon, crush around of the potatoes to thicken the mixture. Stir inwards the milk, parsley, corn as well as pepper.



  2. In a small-scale container amongst a tight lid, add together 1/4 loving cup milk amongst the cornstarch as well as milk shiver until blended. Slowly stir the cornstarch mixture into the soup. Heat slow until thickened as well as bubbly. Remove from rut as well as stir inwards 1/2 the grated cheese. Sprinkle the remaining cheese as well as fresh chopped parsley on each serving.



  3. Adjust the quantities to stand upwards for your taste.
