Mojo Salmon Bowls

These good for you Cuban-inspired Mojo Salmon Bowls are filled with marinated baked salmon, dark beans, grilled pineapple, grilled plantains, rice, greens, tomatoes, cilantro, in addition to lime! They are packed with tons of healthy fats, vitamins, as well as fiber, as well as they are super quick to set together!

I really don’t intend I could pick out my favorite office of this bowl. The mojo marinade for the salmon is SO flavorful, too salmon is my favorite fish also! I arrive at least in one case a week.


And don’t even go me started on plantains. I ever brand tostones, which consists of frying sliced plantains, nifty them, together with frying them over again. Seriously my dream nutrient! I had never tried grilling them until at once, but they are and then so delicious. I dear the smoky flavor!

If you don’t know Lindsay, she’s such a culinary genius. Her combinations of flavors, recipes, too photography blow me away. She’sec also a nutrition specialist, and focuses on fueling your torso amongst existent nutrient! My kind of gal.


I too like to telephone call her the queen of bowl meals, because she actually is! And her novel cookbook is a reflection of that! 75 bowls in fact. And I desire to make ALL of them. I had such a hard fourth dimension choosing what to make!

I dearest bowl meals soooo much. I practically consume 95% of my meals out of bowls. These are definitely going to go a new regular in this house.


They’re besides then unproblematic to pose together, specially if you have leftover rice or beans in the fridge that require to live re-purposed!

The grilled pineapple inward these is SO amazing besides. I forgot how much I loved it. I haven’t had it since terminal summertime, too that literally feels like years ago. These sort of transported me back to warmer weather, which I am e'er a fan of.
