Fresh Mini Apple Cakes
3/4 loving cup unbleached all-purpose flour
3/4 teaspoon baking powder
pinch of salt
4 large apples, all dissimilar varieties
2 large eggs
3/4 loving cup granulated sugar
3 tablespoons spiced rum
1/2 teaspoon pure vanilla extract
8 tablespoons unsalted butter, melted together with cooled
Preheat oven to 350 degrees. Place 3 mini cake pans on a baking sheets. Set aside.
Whisk together the flour, baking pulverisation together with salt. Set aside.
Peel the apples, cutting them inwards one-half to take the marrow together with while into 1 to two inch chunks.
In a medium mixing bowl whisk the eggs until foamy. Add the carbohydrate together with whisk until blended. Add the rum together with vanilla together with whisk to combine. Add one-half the flour together with ane time blended, add together one-half the melted butter. Repeat past times adding the remaining flour gently whisking until combined, therefore add together the remaining melted butter. Do non shell but gently crimp inwards the apples amongst a safe spatula. Divide the batter betwixt the 3 baking pans. Apple Cider Glaze:
1 loving cup apple tree cider
1 teaspoon set down cinnamon
1 teaspoon pure Vanilla extract
1 tablespoon unsalted butter
1/2 loving cup confectioners’ sugar
Add the apple tree cider to a medium saucepan. Heat on high until it comes to a boil. Reduce the rut to medium or medium-low to keep a gentle boil. Cook for twenty minutes or until the cider is reduced inwards half. Remove from the rut together with add together the cinnamon, vanilla together with butter. Whisk inwards the powdered carbohydrate until smooth. When laid to serve, drizzle over fresh apple tree cakes or H2O ice cream.
