Lemon Blueberry Scones

2 cups all-purpose flour

1/4 loving cup sugar

1 tablespoon lemon zest

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

6 tablespoons butter, cutting into pocket-sized pieces

1 loving cup fresh blueberries, washed too drained

2 tablespoons fresh lemon juice

1/2 loving cup heavy cream

1 egg

extra cream to brush on top


Glaze (mix together):

1/2 loving cup confectioner’s sugar

1 tablespoon fresh lemon juice

1 teaspoon lemon zest


Preheat oven to 400 degrees.

In a large mixing bowl combine flour, sugar, lemon zest, baking powder, common salt too baking soda.  Cut inwards the butter until the mixture resembles coarse meal.  Add the blueberries too gently mix.  Set aside.

In a pocket-sized mixing bowl whisk together the cream, lemon juice, too i egg.  Pour the egg too cream mixture into the dry out mixture too gently stir until it forms a soft dough.

Turn the dough out onto a lightly floured surface too knead until good mixed.  Form the dough into a rectangle close xv inches long, past times iii inches wide, past times 1 1/4 inches high.  Cut the rectangle inwards one-half too so inwards one-half again.  Cut swallow of the 4 pieces on a diagonal.  Place the scones on a ungreased cookie sheet, or Silpat Mat or a parchment lined baking sheet.

Bake for 15-20 minutes until golden brown.  Allow the scones to cool slightly too drizzle amongst glaze if desired.
