Mock Pecan Pie

I know it is difficult to imagine a pecan pie without pecans, right? Well, whether you lot induce got nut allergies, or you lot are similar me in addition to discovery it harder in addition to harder to pay nearly $10 a pound for pecans, you lot powerfulness laissez passer on this fun, quick in addition to slow recipe a try.

This recipe uses plainly former rolled oats instead of pecans. Sounds strange, I know, but the oats soak inwards the butter in addition to sugars in addition to bake into a golden brownish in addition to crunchy topping that sits on overstep of a traditional soft sweetness filling.  As a test, I gave Picky Picky Hubby a while afterward dinner in addition to never mentioned the rolled oats. He ate a few bites, declared the pie a "winner" in addition to thence said, "I idea you lot said you lot were out of nuts" (he idea he was eating nuts)!! It actually is tasty.

¾ loving cup low-cal corn syrup
¾ loving cup granulated sugar
3 eggs lightly beaten
1 loving cup rolled oats (quick cooking is OK if necessary)
¼ loving cup melted butter
2 teaspoons vanilla
9" unbaked pie crust
This takes almost "three seconds" to mix up; only mix everything inwards a bowl (with a whisk) until polish in addition to pour into unbaked 9" pie shell.  Bake inwards preheated 350 bird oven for sixty minutes or until knife inserted inwards middle comes out build clean (my oven took fifty minutes).  That's it!! Quick in addition to easy.

The baked "nut" topping is dainty in addition to crunchy in addition to does non gustation similar oatmeal at all!!  Picky Picky Hubby has told me how much he likes the pie THREE times this eve (that's rare).
