Spring Vegetable Salad with Farro and Lemon Mint Vinaigrette

Spring Vegetable Salad

    infant arugula


  • three
    cups
    cooked farro (I buy the quick cooking variety)


  • i one/ii
    cups
    cooked peas


  • 2
    watermelon radishes, thinly sliced


  • 2
    regal daikon radishes, thinly sliced


  • i/two
    loving cup
    crumbled feta cheese




For the lemon mint vinaigrette




  • juice of three lemons


  • 20
    fresh mint leaves


  • ane
    pocket-sized clove of garlic


  • ii
    teaspoons
    dijon or rock earth mustard


  • 1/ii
    cup
    olive rock oil


  • ocean table salt in addition to freshly earth black pepper





Instructions





  1. Preheat the oven to 400℉. Line a big rimmed baking sail amongst parchment paper. Place the carrots on the sail in addition to toss alongside 2 teaspoons of the olive rock oil.
