I accept been super into salsas lately, especially amongst all of the fresh produce available inwards the summer. My mom came abode amongst these GORGEOUS peaches too nectarines from a footling local produce stand, and I had some leftover grilled corn from . So, I decided to make a yummy fruit salsa with a little twist..I fifty-fifty added cantaloupe as well as cucumbers in addition to mint! I normally always add cilantro to my salsas, only the mint inwards this was super refreshing and delicious! (I garnished it amongst a little cilantro).
i/ii c. diced peaches
three/four c. diced nectarines
three/iv c. diced cantaloupe
three/4 c. diced English (seedless) cucumber
one/ii c. grilled corn
ane serrano pepper, seeds too ribs removed, finely chopped
one i/2 T. fresh mint, chopped
2 T. rice wine vinegar
ane T. dear
one T. olive crude oil
juice of 1 lime
1/four tsp. table salt
1/4 tsp. pepper
Combine all ingredients inwards a medium bowl. Stir to combine, too flavor to taste amongst additional salt too pepper. Refrigerate for a twosome of hours to permit flavors train and marinate. Serve alongside chips, or place on tacos, grilled chicken, or fish!
