Healthier Loaded Crispy Smashed Potato Bites
Ingredients

pounds
(28 oz.) mini potatoes (mine were a mixture of cherry, purple, together with gilt)
two 1/2

olive rock oil
common salt too pepper
Greek yogurt for topping (I used 0%, simply 2% or whole milk yogurt would live fifty-fifty creamier!)

slices bacon, cooked and crumbled

freshly grated cheddar cheese

scallions, thinly sliced
Instructions
Bring a large pot of H2O to boil. Add potatoes and make for almost xx minutes, or until only barely fork tender. Drain together with fix aside.
Preheat oven to 425℉.
