Delicata Squash, Pear, Pecan, and Cranberry Quinoa Salad

I take the perfect repast prep recipe for your Mon! This salad is full of autumn ingredients (shocker, I know), and it’sec then hearty. AND good for you! The quinoa is packed amongst poly peptide for staying ability, and the roasted crush makes it more than substantial too. The pecans add together much needed compaction, too the pear as well as cranberry add together sweet!

Ingredients





  • For the SALAD:


  • one
    loving cup
    quinoa


  • i 3/iv
    cups
    water


  • i
    delicata squeeze, cut in half lengthwise, de-seeded, and cutting into ane/2'' slices

    cinnamon

    teaspoon
    table salt

    pepper

    pecans, chopped

    dried cranberries, chopped

    pear, diced

    chopped herbs of your option (I've used parsley together with oregano, and sage besides!)


  • For the DRESSING:


  • juice of i/2 a lemon

    apple tree cider vinegar


  • one/ii
    teaspoon
    dijon mustard


  • one
    tablespoon
    pure maple syrup


  • ane/two
    teaspoon
    dried thyme


  • i/four
    teaspoon
    table salt

    teaspoon
    pepper


  • 2
    tablespoons
    olive petroleum





Instructions





  1. Bring water to boil inward a medium saucepan. Add quinoa and stir. Cover together with trim to low rut, too prepare for fifteen minutes until all liquid is absorbed. Set aside to cool.
