Honeycrisp Arugula Date Farro Salad
Ingredients
For the salad

cooked farro*

large honeycrisp apple tree, chopped

For the orangish maple vinaigrette

of a medium shallot, finely chopped (nearly two tablespoons)

clove garlic, finely chopped

orange zest

pure maple syrup

dijon mustard
juice of 1 bellybutton orange

apple tree cider vinegar
pinch of cinnamon

Instructions
For the salad
Add the farro, chopped apples, dates, pecans, shallots, parmesan cheese, in addition to arugula to a large bowl. Season amongst a pinch or 2 of common salt together with freshly cracked dark pepper. Toss to combine. Add desired amount of the vinaigrette and toss over again to coat. Season to taste with additional table salt as well as pepper if desired. Serve alongside extra vinaigrette.
For the orangish maple vinaigrette
In a pocket-size bowl, whisk together the shallot, garlic, orangish zest, orangish juice, apple cider vinegar, maple syrup, dijon, table salt, as well as pepper until combined.
