Spicy Tomato Plant Bacon Spaghetti


I honey spaghetti!  So, when this month's Crazy Cooking Challenge came some amongst the challenge of spaghetti amongst cherry sauce, I was stoked.  (Yes, I did grow upward during the 80's, inwards example you lot were wondering ... ya know, amongst my cool purpose of the give-and-take stoked in addition to all.)  So many spaghetti possibilities!!!  In my search for my challenge entry, I flora means to a greater extent than than 1 spaghetti dish of interest.  For the challenge, I went amongst Pizza Spaghetti Bake, but that wasn't the entirely spaghetti dish whipped upward inwards my kitchen during my challenge preparations.  Nope.  I also barbarous inwards honey amongst this Tomato Bacon Pasta from Just One Cookbook.  Delicious.

With a generous dose of crushed cherry pepper simmered inwards the sauce, this dish is inwards work amongst the flavors of a spicy Pasta Amatriciana served at 1 of my favorite local Italian restaurants.  I'm excited to instantly know how to gear upward this at home!  But amongst the add-on of bacon, I intend this version may fifty-fifty boot the eating theatre dish's pa-tooty!

I cooked upward some applewood smoked bacon in addition to combined it amongst lots of chopped onion, some garlic, diced tomatoes, in addition to crushed cherry pepper ...


... in addition to allow that simmer together to teach a beautiful bacon-y cherry sauce.


Then I added cooked spaghetti in addition to lots of fresh parsley, tossed it all together ...

... in addition to topped it off amongst freshly grated Parmesan in addition to to a greater extent than parsley.  The result?  H5N1 dish that's both delicious in addition to beautiful.  As nosotros country at our house, it's a keeper!  Most definitely.




Spicy Tomato Bacon Spaghetti
Ingredients
1/2 of a 13 or 14 oz. packet spaghetti  (I used whole wheat)
8 slices applewood smoked bacon, chopped  (you could purpose regular bacon only fine)
ii cloves garlic, minced
1 large onion, chopped
1/2 tsp. cherry chili pepper flakes
ii (14.5 oz.) cans diced tomatoes, undrained
1/2 c. reserved cooking H2O from cooking the pasta
1/2 c. chopped fresh parsley
Sea common salt & freshly grated dark pepper, to taste
Freshly grated Parmesan cheese
Additional chopped fresh parsley


Directions
1.  Cook spaghetti inwards a large pot of salted boiling H2O according to packet directions.  When spaghetti is cooked, reserve 1/2 loving cup of the cooking water.  Drain spaghetti in addition to laid aside.

2.  Meanwhile, gear upward bacon inwards a large skillet until only browned, most v minutes; drain.  Add onion in addition to garlic to the drained bacon; gear upward until onion is translucent, most iv to v minutes.  Add cherry chili pepper flakes, diced tomatoes amongst juice, in addition to reserved pasta water.  Stir to combine.

3.  Bring to a simmer and in addition to hence cook, uncovered, for 10 minutes.  Season amongst common salt in addition to pepper, to taste. 

4.  Add the pasta in addition to 1/2 loving cup chopped fresh parsley; toss to coat.  Top private servings amongst grated Parmesan in addition to additional chopped parsley.
