I accept a confession ... these Salted Caramel Cupcakes accept been sitting inwards my 'queue' for quite a while, exactly waiting (oh too thus patiently!) for me to acquire around to sharing them alongside you.  I real made these beauties, along alongside super-fun Neapolitan Cupcakes, this summertime ...
... for a bridal shower a friend of mine was hosting.

When my friend asked if I'd brand cupcakes for the event, of course I said yes!  I mean, an excuse to bake??  I'm all over that.  Especially when I acquire the fun of baking too creating without my thighs taking the striking for it.  Oh, those pesky thighs.  They appear to love to absorb saccharide too butter.

And my friend gave me consummate creative license to conduct the cupcake flavors.  I asked her ... similar a meg times, I swear ... are yous sure yous don't tending what flavors I make?  She genuinely didn't care.  I dear beingness handed wide-open creative license similar that!

My get-go acquire at the caramel buttercream frosting gave me a chip of problem ... but I persevered too conquered!  Funny how when yous pour hot melted caramel into butter-based buttercream frosting, the frosting doesn't ... well, ... fare also well.  Caramel-and-sugar-and-melted-butter soup, anyone??

So I learned, the difficult way, to allow the caramel cool earlier combining it alongside the frosting base.  Guess I should accept known that, huh?

Second batch ... alongside my learnings applied ... came out great.  And these piffling beauties became the belle of the ball.  {Well, aside from the bride-to-be of course!}

Salted Caramel Cupcakes alongside Caramel Buttercream Frosting

Ingredients
  • 1/2 c. (1 stick) butter, softened
  • 4 oz. cream cheese, softened
  • 1 1/4 c. granulated saccharide
  • 3/4 c. dark chocolate-brown sugar
  • 1 T. canola oil
  • 4 eggs
  • 1 tsp. vanilla extract
  • 3 c. all-purpose flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 c. buttermilk
  • Caramel Buttercream Frosting {recipe below}
Directions
  1. Line 24 muffin cups alongside newspaper cupcake liners. Set aside.
  2. Using an electrical mixer, cream together butter, cream cheese, sugar, chocolate-brown sugar, too crude until lite too fluffy, nearly 3-4 minutes. Add eggs 1 at a time, mixing good afterward each addition. Add vanilla, baking powder, baking soda, too salt; mix until good combined.
  3. Beginning too ending alongside flour, add together flour alternately alongside buttermilk, mixing betwixt each addition.
  4. Distribute batter evenly betwixt the muffin cups. Bake at 350 degrees for 18-20 minutes, or until a toothpick inserted inwards the centre comes out clean.
  5. Cool completely on a wire rack. Frost alongside Salted Caramel Buttercream {recipe below}. Garnish alongside a piece of caramel candy, too sprinkle alongside a chip of body of body of water salt.



Salted Caramel Buttercream Frosting
Ingredients
  • 1/2 c. (1 stick) butter, softened
  • 3 oz. cream cheese, softened
  • 2 tsp. vanilla extract
  • 1 lb. confectioners' sugar
  • 4 T. milk, divided
  • 15 caramel candies, unwrapped (I used Kraft caramels)
  • Additional sliced caramels (for garnish)
  • Sea salt
Directions
  1. Using an electrical mixer, shell together the butter, cream cheese, too vanilla until lite too fluffy, nearly 3-4 minutes. Add confectioners' saccharide too iii tablespoons of the milk; shell until good combined too smooth, nearly two minutes. Cover too refrigerate.
  2. Meanwhile, melt the caramel candies along alongside the remaining 1 tablespoon of milk inwards the microwave at thirty 2nd intervals until caramels are completely melted. Set aside to cool until the caramel is cooled but nevertheless soft too pliable.*
  3. Once the caramel is cooled, mix into the frosting until good combined.
*Setting the caramel aside to cool is important!  I discovered the hard way that mixing hot melted caramel into butter-based frosting does NOT plough out well.  Also, I had to utilization the electrical mixer to thoroughly mix inwards the caramel - but folding or stirring didn't work.  You may desire to refrigerate the frosting for thirty minutes or too thus prior to frosting the cupcakes to allow it railroad train a chip afterward mixing inwards the caramel.
