    medium carrots, cutting into 1/2-inch pieces

    medium clove garlic, minced


  • 1
    tablespoon
    tomato paste


  • 2
    teaspoons
    fresh thyme leaves

    stout beer (I used Guinness Foreign Extra Stout)


  • 1
    cup
    frozen peas


  • 1/2
    pound
    puff pastry (one large sheet, thawed per box instructions)


  • 1
    large egg yolk, lightly beaten alongside 1 tablespoon mutual depression temperature water
