Creamy Sweet Potato Soup with Bacon and Maple Pecan Crunch

Ingredients



For the soup




  • ane
    tablespoon
    kokosnoot rock oil


  • i
    medium yellowish onion, chopped


  • 2
    cloves garlic, finely chopped


  • one/two
    teaspoon
    salt, divided


  • ane/2
    teaspoon
    pepper, divided


  • iv
    sweetness potatoes, peeled together with cubed


  • 4
    cups
    low sodium chicken broth


  • one/two
    teaspoon
    cinnamon


  • one/four
    teaspoon
    nutmeg


  • three/4
    loving cup
    one-half together with one-half


  • iv
    slices bacon, cooked together with crumbled




For the maple pecan crush




  • one
    teaspoon
    kokosnoot rock oil


  • 1/two
    cup
    pecans, chopped


  • pinch of common salt


  • pinch of cinnamon


  • pinch of nutmeg


  • i
    tablespoon
    lite brownish carbohydrate


  • ane
    tablespoon
    pure maple syrup





Instructions



For the soup




  1. Heat the coconut rock oil inward a big pot or dutch oven over medium to medium-high heat. Add the onion, garlic, one/iv teaspoon of common salt, in addition to 1/4 teaspoon of pepper together with sauté for iv-v minutes, stirring often. Add the sweet potatoes in addition to chicken broth too bring to a boil. Once boiling, bring down heat slightly too simmer, covered, stirring occasionally, for xx minutes or until sweetness potatoes are tender.




  2. Let soup cool for a few minutes, and then transfer to a blender along amongst the remaining 1/4 teaspoon of table salt together with pepper, the cinnamon, too nutmeg, together with blend until polish.
