 I had the most wonderful, busy weekend amongst my husband, daughter, boy together with our hereafter daughter-in law. We shopped for a marriage dress, went on an engagement photograph shoot (I got to concur the flash, tripod together with reflectors), nosotros carved pumpkins, made a GIANT pot of chili (recipe on Wednesday), together with I made a pumpkin pie! The solely affair I didn’t larn done was my Mon morn pie shipping … together with some laundry … together with the bills, oh shoot – I didn’t much done at all but that’s OK! We had a lovely fourth dimension making a large mess. So pathetic to last belatedly – but hither y'all go!

 Even though I’ve loved Libby’s Famous Pumpkin Pie for every bit long every bit I tin remember, this pie is completely fantastic too.  Dare I say… I similar it better?  You should laissez passer on it a attempt together with allow me know what y'all think.  Cream cheese does something to the pumpkin and creates a creaminess that completely compliments all the ingredients.  You’ll bespeak cream cheese, canned pumpkin, sugar, salt, eggs, half-and-half, melted butter, vanilla, cinnamon, reason ginger, nutmeg together with a 9-inch pie crust.

In a split bowl combine the egg, egg yolks, half-and-half, together with the melted (cooled) butter.  Beat until combined.

Finally add together the vanilla, cinnamon, ginger together with nutmeg.  Blend good together with pour into the prepared pie crust.

Bake at 350 degrees for 50-60 minutes or until the middle is set.  Remove from the oven together with cool to room temperature.

Top amongst sweetened whipped cream if desired.

A lovely pumpkin pie amongst a cream cheese filling

Ingredients




  • 1
    9-inch Pie Crust Recipe (see link inwards notes)


  • 1
    (8-ounce) bundle cream cheese, room temperature


  • 2
    cups
    canned pumpkin puree
    [about 1 together with 1/3 (15-ounce) cans]


  • 1
    cup
    granulated sugar


  • 1/4
    teaspoon
    salt


  • 1
    large egg,
    plus two egg yolks, slightly beaten


  • 1/4
    cup
    unsalted butter, melted together with cooled


  • 1
    cup
    half-and-half


  • 1
    teaspoon
    vanilla extract


  • 1
    teaspoon
    ground cinnamon *


  • 1/4
    teaspoon
    ground ginger *


  • 1/4
    teaspoon
    nutmeg *


  • 1/4
    teaspoon
    ground cloves *


  • Whipped cream for topping if desired





Instructions




  1. Preheat oven to 350 degrees. Prepare a 9-inch pie crust together with refrigerate for xxx minutes. Line the pastry amongst parchment newspaper together with gain total amongst pie weights or beans. Blind bake for v minutes, together with thus withdraw the weights. Bake some other v minutes. Set aside to cool.




  2. In a large mixing bowl, rhythm out the cream cheese until fluffy. Add the pumpkin together with rhythm out until combined. Add the egg mixture to the pumpkin mixture together with rhythm out until combined. Finally, add together the vanilla, cinnamon, ginger, nutmeg, together with cloves until blended.



  3. Pour the filling into the prepared pie crust together with bake for 50-60 minutes or until the middle is set. Cool on a wire or forest rack until room temperature. Top amongst sweetened whipped cream if desired. Refrigerate leftovers.
