  • FOR THE CRUST:


  • 3/4
    cup
    whole wheat flour


  • 3/4
    cup
    white flour


  • 1/2
    cup
    butter
    cut into chunks


  • 1/4
    cup
    greek yogurt


  • 3/4
    tsp
    salt


  • FOR THE FILLING:


  • 1
    small eggplant


  • 1
    small zucchini


  • 1
    medium tomato


  • Handful of cherry tomatoes


  • 1
    tsp
    minced garlic


  • 1/2
    tsp
    salt


  • Pinch
    of pepper


  • 1
    cup
    ricotta cheese


  • 1 1/2
    tsp
    fresh thyme


  • 1
    tsp
    fresh lemon zest


  • 2
    TBS
    olive oil


  • 3/4
    tsp
    ground sage


  • 1/3
    cup
    parmesan cheese


  • 1
    egg

Instructions
